The four biryanis you will meet

Hyderabadi dum. Rice and marinated meat sealed in a pot and cooked together, so the rice takes the flavour rather than being mixed in after. Aromatic, layered, usually the spiciest. Aadaab, Mannat and Ritaj.

Tamil Nadu style. Seeraga samba rice, shorter grain, milder and more savoury than fiery. Topi Vappa is the one.

Karachi style. Heavier on potato and yoghurt, tangier, often with a charcoal finish. Student Biryani.

Malabar. Kerala style with short-grain rice, fried onions, cashews and raisins, sweeter and gentler. Found in the canteens rather than the named restaurants.

One practical note that comes up constantly in reviews: ask about bone-to-meat ratio before ordering mutton, and be specific about spice level if children are eating. Neither is a given.

Aadaab Hyderabad on Electra Road scores highest on our criteria, with a 4.7 across 2,473 reviews. Topi Vappa in Shabiya is the pick for Tamil Nadu style, and Grandma’s Grill has the highest raw rating at 4.8.

Ritaj on Electra Street, with more than seven thousand reviews. It is the name most people give first, though its rating has slipped to 4.0 on portions and service.

Hyderabadi dum biryani is cooked sealed so the rice absorbs the marinade, and tends to be spicier and more aromatic. Tamil Nadu style uses shorter seeraga samba rice and is milder and more savoury.

Electra Street and Al Danah. Ritaj, Antera and Biriyani Hut all sit at the budget end, and the Mussafah canteens are cheaper still.

Grandma’s Grill & Biryani in Al Danah, because the menu covers grills, Indo-Chinese and vegetarian alongside the biryani. Royal Biryani in Al Muntazah handles group bookings well.
